Fiesta Time!
Cinco de Mayo is another fun reason for a party here at our house but I thought I would do a little research and find out what it is actually about...it isnt Mexico's Independence Day, as I had thought. It is the day that the Mexican Army beat the French Army (twice its size) in Puebla, Mexico on May 5, 1862. A classic tale, like David and Goliath. I will have to share that with the kids.
Jen got me these margarita cups (at Walmart) to celebrate Cinco de Mayo! Arent they cute? I happened upon this video on how to rim them with sugar. Check it out...you just rub them with a lime and dip them in a plate of sugar (or salt, I havent tried it but I think that sounds yucky!). They are so festive and fun! I cant wait to do it. I found the Margarita mixes at Costco (2 pack for 6.50ish.). It looks like I only need to add ice since we wont be adding Tequila! Maybe I will add some orange juice or sweetened condensed milk. I have never made Margaritas but it sounds easy enough. And we have some little umbrellas that will be festive.
I am using red, white, and green tablecloths, like the Mexican flag. And we are making these cute little sombreros as name place holders. (I finished one to take a photo below but my little Crafty pants girl wants to finish the rest of them tomorrow!)
Arent they fun? She is having a great time making one for each of us.
My son has been begging for Auntie Olivia's Chicken Taquitos so that is what will be on our menu. (I will see if she is okay with me sharing her recipe.) As well as Mexican rice and chips and salsa. My mouth is watering just thinking about it!

Auntie Olivia's Taquitos
(they are easy and delicious!!)
8-10 tortillas (I like Pepe's tortillas in the 30 pack)
1 10 oz can enchilada sauce
1 c shredded cheese
olive oil
toppings as desired:
pico de gallo, salsa, sour cream, guacamole
Shred the chicken and place in a bowl. Pour enchilada sauce into the bowl with chicken and stir. Warm both sides of a tortilla in a skillet, add 1 large spoonful chicken and sprinkle with cheese. Roll tightly, then fry, seem side down, in olive oil. Serve with toppings!

ReplyDeleteWe have a friend who makes us "authentic" Mexican Tacos that have potatoes in them, they ROCK! I'll get the recipe and post it here for ya'all!!! I crave them all the time!!!!!!
